You asked about the cookie molds. In Holland, speculaas cookies are one of the best known kind of cookies. They are like art work too. They are pressed with in a special way with the flesh part of the palm just under your thumb into the forms and then tapped out carefully. They can be smaller sized cookies and most recognizable is the windmill cookie but they can also be huge cookies with various forms like a boat or SinterKlaas or a man or woman. One of my molds is very costly as it is from a famous bakery where they still have molds hand cut.
